Executive Chef Jacek Faltyn

Executive Chef Jacek Faltyn brings more than three decades of culinary experience to The Exchange, combining the discipline of fine-dining hospitality with the instincts of a restaurateur.

His career began aboard luxury five-star passenger ships before taking him through leading kitchens across Europe. He went on to work in some of Ireland’s most prestigious hotels, including The Merrion in Dublin, home to a two-Michelin-star restaurant and a member of The Leading Hotels of the World, as well as Hayfield Manor, a member of Small Luxury Hotels of the World, and Carlton Hotels. His international experience also includes working at a Michelin-starred hotel in Paris.

In Poland, Jacek held senior culinary roles with Sofitel, including Sofitel Grand Sopot and Chef de Cuisine at Sofitel Wrocław Old Town. His experience also includes Hotel Dana in Szczecin, Destigo Hotels and the Polish hospitality group Dobry Hotel.

His connection with Ireland later came full circle when he became the owner of Roasties Grill in Midleton, Cork, adding the perspective of a restaurant owner to an already extensive international career.

Throughout his career, Jacek has developed a style grounded in classical technique, seasonality and respect for quality ingredients, drawing on Polish, French and international traditions while embracing modern influences.

At The Exchange, Jacek brings a clear focus on quality, flavour and execution. His menu is built around carefully sourced ingredients and confident cooking, from premium cuts grilled over Marabu charcoal in the Josper Grill to seafood, house-made sauces, fresh pasta and seasonal specials. The approach is refined yet generous, with every dish designed to deliver depth of flavour and consistency.
